Sauteed shrimp and Blue Clarage Grits

Shrimp and grits is a quick and easy dinner that is delicious and nutritious as well.

Ingredients

  • 4 cups water or chicken broth

  • 1 cup of Stone Ground Corn Grits ( Blue Clarage Corn Grits used here)

  • salt and pepper to taste

  • 3 tbsp butter

  • 2 cups shredded cheddar cheese

  • 1 pound shrimp, peeled and deveined

  • 2 large cloves of garlic, minced

  • oil for sauteing the shrimp (we use about 2 tbsp olive oil)

  • 1 tsp cajun spice mix (or seasoning of your choice, we often use just paprika)

Instructions

  1. Bring water/ broth to a boil. Add salt and pepper. Add grits and cook until liquid is absorbed, about 20-25 minutes. Remove from heat and stir in butter and cheese.

  2. Rinse shrimp and pat dry.

  3. In a large skillet heat the oil over medium high heat. Add the minced garlic, shrimp, and spices. Sautee for about 5 minutes until shrimp are fully cooked (turn pink).

  4. To serve, spoon some grits into a shallow bowl and scoop some of the shrimp on top. Enjoy!
