Rye Chocolate Chip Cookies

Chocolate Chip Cookies made with Rye flour

Get ready to elevate your basic chocolate chip cookie! The tangy, complex flavor of stone ground rye adds depth to this classic cookie, balancing the sweetness and creating a cookie with a unique, rich taste and a satisfying chew.

Ingredients

  • 1 1/2 cups (180 g) of stone ground rye flour

  • 1/2 cup granulated sugar (100 g)

  • 1/2 cup brown sugar (90 g)

  • 1/2 cup butter (8 tbsp), at room temperature

  • 1 egg

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 3/4 tsp salt

  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 375 degrees F. Line baking sheets with parchment paper and set aside.

  2. In a stand mixer, cream the butter and the 2 sugars. Add the egg and vanilla extract and mix until smooth.

  3. In a separate bowl, mix the flour, baking powder and salt.

  4. Add to the wet ingredients and mix until combined, careful not to over-mix.

  5. Lastly, mix in the chocolate chips.

  6. Use a spoon to scoop balls that are around 1 inch in diameter onto your prepared cookie sheets, leaving about 1 1/2 inches between the dough balls.

  7. Bake the cookies for 14-16 minutes until their edges are golden brown. Let cool before transferring off the baking sheet. Enjoy!
