Rye Chocolate Chip Cookies
Ingredients
1 1/2 cups (180 g) of dark stone ground rye flour
1/2 cup granulated sugar (100 g)
1/2 cup brown sugar (90 g)
1/2 cup butter (8 tbsp), at room temperature
1 egg
1 tsp vanilla extract
1 tsp baking powder
3/4 tsp salt
1 cup chocolate chips
Instructions
Preheat the oven to 375 degrees F. Line baking sheets with parchment paper and set aside.
In a stand mixer, cream the butter and the 2 sugars. Add the egg and vanilla extract and mix until smooth.
In a separate bowl, mix the flour, baking powder and salt.
Add to the wet ingredients and mix until combined, careful not to over-mix.
Lastly, mix in the chocolate chips.
Use a spoon to scoop balls that are around 1 inch in diameter onto your prepared cookie sheets, leaving about 1 1/2 inches between the dough balls.
Bake the cookies for 14-16 minutes until their edges are golden brown. Let cool before transferring off the baking sheet. Enjoy!
