Shrimp and Grits Recipe
Shrimp and grits is a quick and easy dinner that is delicious and nutritious as well.
Ingredients
4 cups water or chicken broth
1 cup of Stone Ground Heritage Corn Grits (Jimmy Red Corn Grits or Blue Clarage Corn Grits)
salt and pepper to taste
3 tbsp butter
2 cups shredded cheddar cheese
1 pound shrimp, peeled and deveined
2 large cloves of garlic, minced
oil for sauteing the shrimp (we use about 2 tbsp olive oil)
1 tsp cajun spice mix (or seasoning of your choice, we often use just paprika)
Instructions
Bring water/ broth to a boil. Add salt and pepper. Add grits and cook until liquid is absorbed, about 20-25 minutes. Remove from heat and stir in butter and cheese.
Rinse shrimp and pat dry.
In a large skillet heat the oil over medium high heat. Add the minced garlic, shrimp, and spices. Sautee for about 5 minutes until shrimp are fully cooked (turn pink).
To serve, spoon some grits into a shallow bowl and scoop some of the shrimp on top. Enjoy!
