This variety of heritage winter wheat is a cross of two Eastern European landrace wheat varieties- Bankuti, known for it’s rich flavor, and Ukrainka, known for having excellent baking qualities. Harvest Rising began growing Banatka wheat in 2019 with a handful of seeds sourced directly from grain preservationist Eli Rogosa. Each year they have used seeds from their previous crop to plant the new one and their 2023 harvest was their biggest yet, which we are happy to share with you as a specialty flour, limited in supply.
