Sweet Breakfast Stone Ground Grits
Sweet Breakfast Grits (Jimmy Red Corn) Topped with Chopped Nuts and Raisins
Grits are very versatile, and while we often think of them as a savory dish, they are also delicious served sweet. Here we prepared them similarly to oatmeal for a hearty breakfast.
Ingredients
1 cup of any variety of Stone Ground Corn Grits (Jimmy Red Corn Grits were used here)
2 cups milk
2 cups water
1/4 tsp salt
2 tbsp honey
2 tbsp unsalted butter
1/2 cup of chopped nuts and dried fruits of your choice (we used equal parts almonds, walnuts, and raisins)
Instructions
In a large pot add grits, milk, water and salt; bring to a boil.
Mix in honey and butter, reduce to a simmer and cook about 20 minutes or until grits reach desired thickness, stirring occasionally to avoid sticking to the pot.
Remove grits from heat and ladle into bowls, topping each with a heaping tablespoon of the nuts/ fruit mixture.
If desired, add another tsp of honey (or maple syrup) for more sweetness.
